Armenian Watermelon, Feta, and Mint Salad

Watermelon feta

Armenians absolutely love to eat watermelon with salty cheese like feta!

Total time: 10 minutes
Yield: 4 to 6 servings

Ingredients:

  • 3 pounds of seedless watermelon (about 1 small or 1/4 large,) rind removed, and cut into 1-inch chunks (roughly 2 pounds/1kg chunks after rind is discarded)
  • 1/4 cup (10 g) chopped fresh mint leaves
  • 4 ounces (110 g) of feta cheese

Instructions:

  1. Place watermelon chunks in a large bowl or serving tray (you can start in the bowl then transfer to the tray)
  2. Add mint
  3. Toss until watermelon is evenly dressed
  4. Crumble feta over top
  5. Drizzle with balsamic vinegar glaze (optional)
  6. Serve immediately
