Lolikov Dzvadzegh (Armenian Eggs with Tomatoes)


  • 4 tomatoes
  • 2-3 tbsp olive oil
  • 1 tbsp butter
  • 3-4 eggs
  • 3 leaves of fresh basil
  • Salt & pepper to taste


  • Choose perfectly ripe 4 medium/large tomatoes 🍅 wash thoroughly and place in a pot, pour boiling water to cover them completely and cover with a lid.
  • Meanwhile add 2-3 tbs of olive oil to a pan and put on medium heat.
  • Open the pot with tomatoes and easily remove the skin. Chop the tomatoes in small pieces and add to the pan and let them slowly simmer mixing with a spoon or spatula.
  • When the tomatoes are evenly cooked after 10 minutes or so add 3-4 eggs straight in the pan and mix with tomatoes.
  • While the mixture cooks continue mixing. While the eggs are cooking add a tbsp of butter and mix. When the eggs are cooked the dish is ready.
  • Add salt, red and black pepper as needed. Decorate the plate with a few leaves of basil.
