Mandak Salad (Wild Parsnip Chervil)

Ingredients:

  • “Mandak“ (half a pound)
  • Cloves of garlic 🧄 (x3)
  • Apple cider vinegar (1 tbsp)
  • Salt 🧂 and black pepper to taste
  • Chopped dill (optional)

Instructions:

  1. Clean, wash (rinse,) and put in a pot of salted boiling water. Cook until soft in the thickest part of the stem.
  2. Drain and keep some liquid. Let it cool down.
  3. Mince a few cloves of garlic, mix 1 tbsp of apple cider vinegar, salt and black pepper. Add the reserved liquid, mix, and pour over “Mandak.”
  4. Gently mix and refrigerate before serving.
  5. Garnish with chopped dill (optional.)
