- Sauté the onion in oil.
- Add the boiling water with potatoes, red lentils.
- Simmer till potatoes are soft and the lentils almost done.
- Add the apricots, grated orange rind and the juice. In the end, add the salt and pepper.
- Serve with chopped greens and pomegranate seeds
Karmir Vospov Apour (Armenian Red Lentil Soup)
Ingredients:
- 1.5 cup of red lentils ( well rinsed)
- 1 large yellow onion, finely chopped
- 1 yellow potato, diced
- 1 sweet potato, diced
- 100g of dried apricots, finely chopped
- 1 orange( use the rind and the juice)
- 0.5 of parsley and cilantro leaves, finely chopped
- 1 pomegranate (seeded)
- Olive oil
- 2l of boiling water or vegetable broth
- Salt, red hot Armenian pepper to taste
