Avelouki Apour (Armenian Wild Sorrel Soup)
PREP TIME: 1.5 hours
Ingredients:
- Half a braid of dried wild sorrel
- One espresso cup of peeled wheat (or pearled barley)
- One espresso cup of green lentils
- One medium yellow onion
- A handful of walnuts
- Two tbsp of olive oil
- Two small potatoes
- A handful of dried prunes
- Two cloves of garlic
- Three to four dried sour plums (or half a squeezed lemon juice)
Instructions:
- Soak the dried sorrel in hot water
- Soak Peeled wheat in water
- Wash the lentils
- Chop the onion finely
- Sautée the onion until caramelized
- Add boiling water to the onions
- Throw away the water of the wild sorrel
- Cut the wild sorrel into bite sized pieces
- Add the soaked wheat
- Continue cooking
- Clean the potato and chop into small bite sized pieces
- Add the potatoes to the simmering soup
- Add the pre-washed lentils and continue simmering on low heat
- Finely chop the prunes and sour plums and add to the simmering soup
- Finely chop the walnuts and add to the soup
- Grate two cloves of garlic and add to the soup
- Mix and cover the lid
- Let it stand for 15 minutes before serving
- Add Armenian hot pepper and salt to taste
- Serve hot
