Avelouki Aghtsan (Armenian Wild Sorrel Salad)

PREP TIME: 45 minutes

Ingredients:

  • Dried wild sorrel (half a braid)
  • Onions (2 medium yellow)
  • Olive oil or butter (2 tbsp)
  • Walnuts (finely chopped handful)
  • Garlic (2 cloves)
  • Salt and rd pepper flakes to taste
  • Pomegranate seeds (optional)
  • Lemon (optional)

Instructions:

  1. Add boiling water to dried wild sorrel and drain it twice.
  2. Cut in small pieces and open up the braids.
  3. To the pot of boiling water, add the pre-soaked and drained sorrel and cook for 10-15 minutes and then drain (you can keep the water for making soup).
  4. Next, sauté chopped onions with butter or olive oil.
  5. Add a tablespoon of flour to the onions and stir until the colour is golden.
  6. Add the drained sorrel to the sautéed onions and stir well.
  7. Add some salt, two cloves of minced fresh garlic, and chopped walnuts to taste.
  8. Garnish with pomegranate seeds or squeeze some lemon on it.
  9. Add some red pepper flakes.
  10. Serve hot or cold.
