Armenian Spelt Pilaff with Mushrooms (Hacharov Pilaff)

Note: Spelt is also known as German wheat. 🌾

Ingredients:

  • Mushrooms 🍄‍🟫 (400 grams)
  • Spelt (300 grams)
  • Water (600 ml)
  • Onions 🧅 🧅 (x2 large)
  • Butter 🧈 (60 grams)
  • Olive oil (100 ml)
  • Salt 🧂 to taste

Instructions:

  1. Wash the spelt really well in cold water and place in salted boiling water. If the water evaporates, add some boiling water.
  2. Wash the mushrooms 🍄‍🟫 thoroughly under running water and cut vertically.
  3. Clean the onions and cut half moon shaped.
  4. Heat the oil and the butter in a frying pan. Add the onions, and sauté until translucent. Add the mushrooms, and cook until caramelized with the onions.
  5. Add the ready mushrooms on the cooked spelt, mix well, and cook for 3 minutes more on low heat.
