Armenian Spelt Pilaff with Mushrooms (Hacharov Pilaff)
Note: Spelt is also known as German wheat. 🌾
Ingredients:
- Mushrooms 🍄🟫 (400 grams)
- Spelt (300 grams)
- Water (600 ml)
- Onions 🧅 🧅 (x2 large)
- Butter 🧈 (60 grams)
- Olive oil (100 ml)
- Salt 🧂 to taste
Instructions:
- Wash the spelt really well in cold water and place in salted boiling water. If the water evaporates, add some boiling water.
- Wash the mushrooms 🍄🟫 thoroughly under running water and cut vertically.
- Clean the onions and cut half moon shaped.
- Heat the oil and the butter in a frying pan. Add the onions, and sauté until translucent. Add the mushrooms, and cook until caramelized with the onions.
- Add the ready mushrooms on the cooked spelt, mix well, and cook for 3 minutes more on low heat.
