Armenian Nettle Soup
Ingredients:
- Nettles (half a pound)
- Onion (one medium)
- Olive oil
- Young potatoes (5)
- Salt and pepper to taste
- Yogurt
- Garlic (2 cloves)
Instructions:
- Cut the tops of nettles with scissors at around 3 cm down.
- Rinse well and strain
- Finely chop one medium onion 🧅 and sauté with olive oil until lightly golden
- Add young potatoes 🥔 cut in chunks and cover with boiling water
- Let it simmer until the potatoes are soft
- Add the nettles and continue simmering for 5 minutes
- Salt and black pepper to taste
- Set aside with the lid closed
- Separately, add some strained yogurt in a bowl, squeeze 2 cloves of garlic, add a pinch of salt and black pepper
