Armenian Nettle Soup

Ingredients:

  • Nettles (half a pound)
  • Onion (one medium)
  • Olive oil
  • Young potatoes (5)
  • Salt and pepper to taste
  • Yogurt
  • Garlic (2 cloves)

Instructions:

  1. Cut the tops of nettles with scissors at around 3 cm down.
  2. Rinse well and strain
  3. Finely chop one medium onion 🧅 and sauté with olive oil until lightly golden
  4. Add young potatoes 🥔 cut in chunks and cover with boiling water
  5. Let it simmer until the potatoes are soft
  6. Add the nettles and continue simmering for 5 minutes
  7. Salt and black pepper to taste
  8. Set aside with the lid closed
  9. Separately, add some strained yogurt in a bowl, squeeze 2 cloves of garlic, add a pinch of salt and black pepper
