Armenian Fish Kololak

Ingredients:

  • 1 KG of trout 🐟
  • 1-2 eggs 🥚 🥚
  • Salt, pepper, and nutmeg to taste

For the tomato 🍅 sauce

  • 3-4 tbsp of tomato paste
  • 1-2 tbsp of flour (optional)
  • 50-70 grams of butter
  • 1 onion 🧅
  • Salt 🧂 & pepper to taste

Instructions:

  1. Clean and wash the fish.
  2. Separate the fish from the skin and fish bones.
  3. Pass the cleaned fish twice through the meat grinder.
  4. Add the egg, salt, pepper, and nutmeg to the fish.
  5. Thoroughly mix.
  6. From the mixture, make fish balls that are slightly bigger than walnuts.
  7. Boil water and add salt. 🧂
  8. Carefully place the fish balls in boiling water until cooked.
  9. The kololaks take about 10-14 minutes to be thoroughly cooked.
  10. Take this time to prepare the tomato sauce.
  11. Dice the onion very thinly and sauté in melted butter. 🧈
  12. Add the tomato paste and fried until brown flour; add some more water and simmer a little more.
  13. Serve the kololaks hot with the tomato sauce on top.
  14. You may garnish with chopped parsley 🌿 and/or cilantro.
