Lolikov Dzvadzegh (Armenian Eggs with Tomatoes)

Ingredients:

  • 4 tomatoes
  • 2-3 tbsp olive oil
  • 1 tbsp butter
  • 3-4 eggs
  • 3 leaves of fresh basil
  • Salt & pepper to taste

Instructions:

  1. Choose perfectly ripe 4 medium/large tomatoes 🍅 wash thoroughly and place in a pot, pour boiling water to cover them completely and cover with a lid.
  2. Meanwhile add 2-3 tbs of olive oil to a pan and put on medium heat.
  3. Open the pot with tomatoes and easily remove the skin. Chop the tomatoes in small pieces and add to the pan and let them slowly simmer mixing with a spoon or spatula.
  4. When the tomatoes are evenly cooked after 10 minutes or so add 3-4 eggs straight in the pan and mix with tomatoes.
  5. While the mixture cooks continue mixing. While the eggs are cooking add a tbsp of butter and mix. When the eggs are cooked the dish is ready.
  6. Add salt, red and black pepper as needed. Decorate the plate with a few leaves of basil.
