Karmir Vospov Apour (Armenian Red Lentil Soup)


  • 1.5 cup of red lentils ( well rinsed)
  • 1 large yellow onion, finely chopped
  • 1 yellow potato, diced
  • 1 sweet potato, diced
  • 100g of dried apricots, finely chopped
  • 1 orange( use the rind and the juice)
  • 0.5 of parsley and cilantro leaves, finely chopped
  • 1 pomegranate (seeded)
  • Olive oil
  • 2l of boiling water or vegetable broth
  • Salt, red hot Armenian pepper to taste


Sauté the onion in oil.
Add the boiling water with potatoes, red lentils. Simmer till potatoes are soft and the lentils almost done. Add the apricots, grated orange rind and the juice. In the end, add the salt and pepper.
Serve with chopped greens and pomegranate seeds
