Eggplant rolls

Ingredients:

  • 4 medium eggplants (washed, peeled, and sliced)
  • ½ cup strained yogurt ( lebni),½ cup sour cream
  • ⅔ cup finely chopped or smashed raw walnuts
  • 1-2 garlic cloves,minced
  • Pinch of salt + extra for seasoning fried eggplants
  • ½ tsp curry powder
  • Pomegranate seeds and fresh dill for garnishing
  • Oil for frying ( about 1-2 cups)

Instructions:

  1. Start preheating the oil in a frypan or in a skillet
  2. Wash, peel and slice the eggplants to the length ,about ½ cm thickness
  3. Fry and place on a paper towel , lightly salt to taste
  4. In a medium bowl combine : sour cream, yogurt, walnuts, garlic, curry and salt
  5. Mix to combine
  6. At this point you can start prepping the fried eggplant rolls
  7. Place a teaspoon or a bit more onto the eggplant, spread a layer and roll
  8. Nicely arrange the rolls on your serving platter
  9. Garnish with pomegranate seeds, fresh dill ,chopped walnuts and enjoy!
