Eggplant Rolls
Ingredients:
- 4 medium eggplants (washed, peeled, and sliced)
- ½ cup strained yogurt ( lebni),½ cup sour cream
- ⅔ cup finely chopped or smashed raw walnuts
- 1-2 garlic cloves,minced
- Pinch of salt + extra for seasoning fried eggplants
- ½ tsp curry powder
- Pomegranate seeds and fresh dill for garnishing
- Oil for frying ( about 1-2 cups)
Instructions:
- Start preheating the oil in a frypan or in a skillet
- Wash, peel and slice the eggplants to the length ,about ½ cm thickness
- Fry and place on a paper towel , lightly salt to taste
- In a medium bowl combine : sour cream, yogurt, walnuts, garlic, curry and salt
- Mix to combine
- At this point you can start prepping the fried eggplant rolls
- Place a teaspoon or a bit more onto the eggplant, spread a layer and roll
- Nicely arrange the rolls on your serving platter
- Garnish with pomegranate seeds, fresh dill ,chopped walnuts and enjoy!
