Ingredients:
- Red kidney beans (1 cup)
- Water (3 L)
- Small onion (1)
- Pepper paste (1 tbsp)
- Tomato paste (1 tbsp)
- Walnuts (0.5 cup)
- Shredded cilantro (2 tbsp)
- Coriander powder (1 tsp)
- Red hot Armenian pepper (1 tsp)
- Fenugreek (1/4 tsp)
- Olive oil (2 tbsp)
Directions:
Soak the kidney beans overnight. Change the water a few times while soaking. Pour in a large pot, cover with 3 L of cold water, and bring to boil. While boiling, add a little bit of cold water.
In a separate pan, add the olive oil and finely chopped onion. Sauté until the colour changes. Add the pepper & tomato pasted along with all the spices.
When the beans are soft, add the sautéed onion with spices and continue to boil on a low heat.
Add the finely chopped walnuts to the soup. Adjust the salt to taste. Take off the heat and add the chopped greens. Cover the lid and let stand for 15 minutes.
