Ingredients:
- Large tomatoes x3 🍅
- Large red onion x1 🧅
- Medium eggplants x4 🍆
- Bell peppers x4 🫑 (Different colours preferably)
- Garlic heads x2 🧄
- Fresh parsley, cilantro, basil 🌿 to taste
- Salt & pepper to taste
- Olive oil 2 tbs
Directions:
- Wash all the vegetables thoroughly.
- Poke the vegetables with a fork.
- Grill until the veggies are tender.
- Place in a large bowl.
- Cover the bowl with a plastic wrap and let it rest for a few minutes.
- Peel and clean the grilled vegetables. Remove the seeds of the peppers.
- Add the salt, pepper, olive oil, and the finely chopped fresh herbs.
- Toss and enjoy.
