Armenian Grilled Vegetable Salad (Khorovats Banjareghen)

Ingredients:

  • Large tomatoes x3 🍅
  • Large red onion x1 🧅
  • Medium eggplants x4 🍆
  • Bell peppers x4 🫑 (Different colours preferably)
  • Garlic heads x2 🧄
  • Fresh parsley, cilantro, basil 🌿 to taste
  • Salt & pepper to taste
  • Olive oil 2 tbs

Directions:

  • Wash all the vegetables thoroughly.
  • Poke the vegetables with a fork.
  • Grill until the veggies are tender.
  • Place in a large bowl.
  • Cover the bowl with a plastic wrap and let it rest for a few minutes.
  • Peel and clean the grilled vegetables. Remove the seeds of the peppers.
  • Add the salt, pepper, olive oil, and the finely chopped fresh herbs.
  • Toss and enjoy.
