Armenian Fish Kololak

Ingredients:

  • 1 KG of trout 🐟
  • 1-2 eggs 🥚 🥚
  • Salt, pepper, and nutmeg to taste

For the tomato 🍅 sauce

  • 3-4 tbsp of tomato paste
  • 1-2 tbsp of flour (optional)
  • 50-70 grams of butter
  • 1 onion 🧅
  • Salt 🧂 & pepper to taste

Instructions:

  • Clean and wash the fish.
  • Separate the fish from the skin and fish bones.
  • Pass the cleaned fish twice through the meat grinder.
  • Add the egg, salt, pepper, and nutmeg to the fish.
  • Thoroughly mix.
  • From the mixture, make fish balls that are slightly bigger than walnuts.
  • Boil water and add salt. 🧂
  • Carefully place the fish balls in boiling water until cooked.
  • The kololaks take about 10-14 minutes to be thoroughly cooked.
  • Take this time to prepare the tomato sauce.
  • Dice the onion very thinly and sauté in melted butter. 🧈
  • Add the tomato paste and fried until brown flour; add some more water and simmer a little more.
  • Serve the kololaks hot with the tomato sauce on top.
  • You may garnish with chopped parsley 🌿 and/or cilantro.
